Prawns on toast

Ingredients
- 1 cup of clean uncooked prawns
- ½ tsp of salt
- ½ tsp of Chinese salt
- ¼ tsp of white pepper or black pepper
- 1 tbsp of corn flour
- ½ of an egg white beaten
- 1 tsp of finely chopped cabbage
- 1 tsp of finely chopped carrot
- One green chilli finely chopped (optional)
- 6 bread slices cut into triangles
- Oil for deep frying
Method
Step 1
Put the raw prawns in a blender, mince it and add in salt, pepper, egg white and corn flour. Then add chopped vegetables, stir it, take a spoon full and put the paste on the bread only on one side.
Step 2
In pot heat oil, temperature should lie between a medium to high flame. Dip the bread with the spread into the hot oil; cook the bread till its golden brown. Take it out and place on a paper towel to remove excess oil. Slice it diagonally to form triangles.
Step 3
Serve with your favourite dipping sauce. Variation Mince raw boneless chicken can also be used instead of prawns.
