Singapori chicken

Ingredients

  • Boneless chicken fillet one in quantity
  • Curry powder 3 tsp
  • Chopped onion half cup
  • Pineapple chunks 3/4 cup and pineapple syrup
  • Chicken stock 1 cup
  • Salt ½ tsp
  • Light soya sauce 1 tsp
  • White pepper 1 tsp
  • Finely chopped green chillies 1 tsp
  • Cornflour 2 tbsp dissolved in ¼ cup of water
  • Capsicum/bell pepper cut in cubes 1/2 cup
  • sliced mushrooms 1/2 cup

Method

Step 1

Heat oil in a pot, add in onions till it softens and appears clear. Add in chicken and fry. Now sprinkle curry powder salt, pepper, soy sauce and pour in chicken stock. Cover the pot with a lid and leave it to cook for 20 minutes.

Step 2

Then add chunks of pineapple and pineapple syrup or juice. Fry capsicum and mushrooms as well in a tsp of oil for a minute and put them in the gravy. Add in dissolved corn flour and let the gravy thickens. Serve with rice.
