Pineapple pleasure

Ingredients
- A cup of pineapple chunks
- 1 cup of double cream
- short bread 5 crushed into crumbs
- 2 packet of pineapple flavoured jelly powder
- 3 eggs
- Two and a half cup of whole milk
- 3 tbsp of cornflour
- pineapple essence
- 1 cup of icing sugar
Method
Step 1
Separate the yolk from the eggs.Add in the yolks sugar,milk,cornflour and pineapple jelly powder and whisk to remove any lumps.Heat the mixture for 2-3 minutes and just as it starts to thicken remove from heat and let it cool avoid boiling and over cooking .
Step 2
In a serving spread the crushed short bread crumbs and let it chill in the fridge to make a firm base.
Step 3
Whisk the egg white into stiff peaks.Whisk the double cream until stiff and it starts to retain shape.
Step 4
Add in the pine apple chunks to the cooled yolk mixture.
Step 5
To the yolk mixture add in whipped double cream,whisked egg whites and gently stir.Don't over stir or the mixture will collapse.
Step 6
Pour the pineapple mixture over the short bread and let it chill in the freezer till it sets.Please leave some space for garnish at the top.
Step 7
Heat 1 cup of water and add in pine apple jelly ,stir it till the sugar and gelatin dissolves.Let it cool slightly and then pour it over the set pineapple dessert.A beautiful layer of pineapple jelly will for the top layer .Decorate with fresh cream or chocolate if desired.
Optional:
Adding a tbsp of unsalted butter with crushed biscuits helps to form a firm base for the dessert.Half a tsp of coca powder can be added to the biscuits as well .If you have cake as a left over you can use cake instead of biscuits.
