Lemon and cream cheese icing

Ingredients
- 1/4 cup of mascarpone cream cheese
- 2 tbsp of icing of sugar
- 1 tsp of lemon zest
- 1 cup of whipping cream
- 1 cup of whipping cream
Method
Step 1
This filling has to be chilled. In a bowl whip the cream to a stiff peak. In another bowl put mascarpone cheese, lemon juice, sugar, lemon zest and whip till it’s light and smooth. Now fold in the cream cheese into the whipping cream and whisk. Then pipe or just layer it over the cup cake. Sprinkle lemon zest over top. This goes well with plain as well as lemon flavoured cup cakes.
