Roast with vegetables

Ingredients

  • Whole chicken with skin one and a half kg
  • Fresh oregano 1 tbsp
  • Fresh thyme 1 tsp
  • Barbecue sauce 3 tbsp
  • English mustard paste 1 tsp
  • Vinegar 2 tbsp
  • Lemon 2 tbsp
  • Chilli flakes 2 tsp
  • Tomato ketchup 3 tbsp
  • Garlic paste 1 tbsp
  • Butter 3 tbsp
  • Black pepper corn 1 tsp freshly grounded
  • Chilli sauce 1 tsp
  • For vegetables:-
  • Sweetcorns 1/2 cup
  • Button mushrooms 1/2 cup
  • Broccoli 1/2 cup
  • Butter 1 tbsp
  • Carrots 1/2 cup
  • One onion cut into cubes
  • Tomatoes 3 skinned and peeled

Method

Step 1

For Chicken:- Marinate the chicken for around 6-8 hrs .Tie string around the chicken to keep it intact. Place the chicken in a roasting bag and tie a loose knot to seal it.Make two three holes in the bag for the air to escape.

Step 2

Pre-heat heat the oven for 10- 15 minutes.Then place the roasting bag enclosing the chicken in the oven on medium heat for an hour or till the chicken is cooked.

Step 3

For vegetables:- Steam the vegetables for 3 minutes and then remove them.Take a pan place a knob of butter and fry the vegetables for 2 minutes.Serve with the roasted chicken and potato wedges or chips.
