Karahi Ghost (fried meat cooked in a wok)

Ingredients
- 2 kilo of lamb chops
- 1 kilo tomato
- Salt to taste
- 5 green chillies
- 3 tsp of freshly grounded corriander powder
- 1 tbsp of ginger&garlic paste
- ½ cup of yougurt
- 1 tsp of turmeric powder
- 1 cup of oil / ghee
- ¼ kilo of onion finelly chopped
- 3 tsp of red chilli flakes
- 1 tsp of dried fenegreek leaves
- 2 tsp of freshly ground black pepper corns
- ¼ tsp of black cumin
- ¼ tsp of freshly gounded thyme seeds
For Garnishing
Ginger, sliced green chilllies,corriander leaves, 1/4 tsp of corriander and cumin powder
Method
Step 1
In a karahi/wok heat oil and add lamb chops to fry. Seal the meat, add in ginger garlic paste, a tsp of salt and stir. Add in tomatoes and yougurt and cook till the water is reduced, now add in the spices (turmeric powder, black cumin, fenugreek leaves, thyme powder, chilli flakes and stir well till the oil starts separating. To serve, add in crushed black pepper and garnish with ginger, sliced green chillies, corriander leaves and a ¼ tsp of corriander and cumin powder.
