Ingredients
- For Boiling :-
- 3-4 brain portions of goat/lamb around 250 grams
- 2 tsp of turmeric powder
- Salt to taste
- ΒΌ tsp of crushed or garlic puree
- For Frying
- 4 tbsp of oil
- 1 tsp of crushed chilli flakes
- 1 small onion finely chopped
- 1 small tomato finely chopped
- Pinch of fenugreek powder (methi)
- Pinch of ajwain powder (thyme)
- 1/2 tsp of salt
Garnish :
2 tbsp of coriander leaves,1 small green chilli finely chopped,grated ginger.
Method
Step 1
Boiling:- In a small pot boil the brain add turmeric and garlic puree, salt just a pinch for 5 minutes till the redness ends, remove and clean any veins. Drain the water and place the brain to one side.
Step 2
Frying:- Now in a fresh pan on a low flame put onions which were very finely chopped first. Let it cook on low flame till the color changes to transparent. Then add tomatoes and stir it till the tomatoes soften. Add fenugreek, ajwain (thyme seeds grounded into powder), crushed chilli, salt. Then add brain. Constantly stir it and try to break brain into smaller pieces just the size of pea. The reason for it is to mix the ingredients together and to have a good taste in every bite. In the end add coriander leaves, green chillies. Serve it with puri (deep fried bread) or roti (plain bread just like wraps).
