Stuffed chicken fillet

Ingredients

  • Chicken breast fillets 4 portions
  • Meat tenderizer 1 tbsp
  • Cheese slices four
  • Finely sliced and chopped mushroom ½ cup
  • Olives 4 tbsps
  • Salt 1 tsp
  • Pepper 1tsp
  • Whisked Eggs 2
  • Distilled vinegar 2 tbsp
  • Bread crumbs for coating
  • ½ cup of dry corn flour
  • Oil for deep frying

Method

Step 1

Take boneless breast fillets of chicken slice them open. Hammer them till they spread out. Hammering helps in breaking the muscle fibres and makes it relatively easy cooking of chicken. Put some meat tenderiser and leave it for an hour or more.

Step 2

Now open the sliced filled and start placing mushroom cheese slices, olives inside and then close it .Now carefully roll it onto dry corn flour, dip it in egg and crumb coat it. Heat oil for deep frying and fry it till the meat is completely cooked and it appears to be golden brown and crisp. Serve with rice fries and coleslaw.
