Sheer Khorma (vermicelli cooked in milk with dry fruits )

Ingredients
- 2 litre of whole milk
- ½ cup grounded dry fruits (almonds, pistachios, raisins)
- 2 drops of saffron essence (optional)
- ½ cup of vermicelli
- 1 tbsp of ghee
- 1 tsp of powdered cardamom seeds
- 1 cup of sugar
- 5 dates without pit
Method
Step 1
Soak dates in water let them swell, remove pit/seed and the hard scaly brown skin, revealing the fleshy part. Slice the dates into small pieces. In a pot heat milk and let it cook on a low flame, reduce the milk to three quarters in its quantity and add in the chopped dates. In a pan on a low flame put 1 tbsp of ghee let it melt ad put vermicelli, dry fruits and sugar, cardamom powder. Stir constantly and then when you can start to smell the aroma, take the pan off from the pan and empty it in the pot of milk, add in the essence too. Let the mixture cook for 20-25 minutes on very low flame or till the vermicelli are cook. Remove from heat and serve hot or chilled.
Step 2
When Sheer khorma is cooled, the mixture thickens. So, when serving milk can be added. Also, the amount of sugar can be increased depending how much you like.
