Rice pudding

Ingredients
- 250 grams of broken grains of rice
- 1 and a ½ kilo whole milk
- 1 and a ½ cups of sugar
- ½ cup of (split milk) khoya
- 4 green cardamoms
- Silver sheets for decoration
- 2 tbsp finely chopped almonds and pistachios
Method
Step 1
Wash and soak broken grains of rice in water. Grind them. Heat milk in a pot add cardamom. Allow milk to reduce to ¾ and the colour turns a bit reddish, now add ground rice paste, sugar and khoya, cook it on low flame and stir it all the way till the rice is completely cooked. Pour it in a serving dish, decorate with almonds, pistachios. When cooled put silver sheets for decoration. Serve it cold.

Variation
Sugar and khoya can be added to milk mixture after the grounded rice has softened completely.
