Ingredients
- 1 and a half cup of sugar
- ¼ cup of water
- 1 tbsp of glucose is optional
- 1 ½ cup of whipping cream
- 1 tsp of vanilla essence
Method
Step 1
Heat a sauce pan; add in first water then sugar, glucose (optional). Let the sugar caramelise over a medium flame, as soon as the colour changes to a brownish yellow hue add in whipping cream and vanilla essence .Boil for two minutes till it turns light brown and remove from heat and let it cool. The caramel when cooled along with crushed nut brittle can be drizzled over the vanilla cupcake frosted with whipping cream. The caramel sauce can also be piped into the centre of a cup cake to achieve maximum taste of caramel.
