Besan kay ladoo (bite size balls made from gram flour)

Ingredients

  • 4 cups of chick pea/gram flour
  • 12-15 almonds
  • 12 cashew nuts
  • 1 cup of ghee
  • 1 tsp of crushed green cardamom seeds
  • 2 cups of fine (icing) sugar

Method

Step 1

Sieve gram/chickpea flour and keep it aside. Grind almonds and cashew nuts coarsely. Put gram flour in a low flame and slightly roast it till the flour emits aroma and is cooked, it takes 10- 15 minutes and remove from heat. Simultaneously, take a bowl, put icing sugar in it and place the icing sugar over the water bath (bain-marie) and stir it around for 5 minutes, this is done to prepare sugar to easily incorporate and bind with gram flour. There should be no change in the colour of icing sugar. Take icing sugar off from the water bath.

Step 2

Mix gram flour, sugar, grounded almonds, cashew nuts and cardamom powder together. In bowl take milk around a quarter cup, wet hands with the milk and make small ball and inch in diameter. Keep them in an air tight container.
