Suji ka halva (Semolina Sweet dish)

Ingredients
- ½ cup of semolina
- ½ cup of sugar
- 1 cup of water
- ¼ tsp yellow colour
- 1 cup of oil/ ghee
- 4 pounded/crushed green cardamoms along with their seeds
Garnish
Almond flakes, pistachio flakes, raisin can be added too.
Method
Step 1
In a pan put water, sugar and yellow colour, green cardamoms and let them cook till all the sugar is dissolved. In a pot put oil or ghee (hydrogenated oil) slightly roast the semolina, the change in colour should be slightest, quickly move it away from the flame. Add the coloured sugar water/syrup to semolina. Cover it and let it cook on low flame for 15 minutes on low flame till the semolina softens and oil separates. Garnish it with flakes of almonds, pistachio (and even raisins).
