Ingredients
- 2 cups of granulated sugar
- ¼ cup of water
- 1 tsp of vanilla essence
- 1/4 cup of corn syrup or fruit sugar (fructose)
- A pinch of cream of tartar is optional
- 1 cup mixed nuts almonds, pistachios, pecans, peanuts (or you can use a cup of any one variety of nuts)
Method
Step 1
Toast the nuts on a low flame for around 5 minutes, this helps to release the oils and flavours to come out from the nuts.
Step 2
Take a saucepan first place in ¼ cup of water and then put granulated sugar to prevent the direct contact of sugar with the base of pan. Now add in a pinch of cream of tartar and let the sugar bubble, add in corn syrup or granulated fruit sugar.Brush the sides with water to prevent crystallization let it cook on a medium flame till the colour changes to golden and add vanilla essence. Remove it from heat and pour it over a parchment paper and let it cool.
Step 3
Sprinkle toasted peanuts, pistachios, pecan nuts, almonds .The brittle will get hard in a minute or two, if doesn’t set it means the sugar has not been cooked. Start caramelization of sugar again.
Step 4
If you caramalize the sugar for a long time it will turn dark and bitter and it doesn’t taste good, the colour should be light golden ,light orange tone.
