Ingredients
- A cup of whipping cream
- 2 tbsp of icing sugar
- 2 tbsp of milk powder
- ¼ tsp of lemon flavour or orange essence
- Lemon rind or orange rind for sprinkling
Method
Step 1
Take a grater and grate only the outer coloured layer (zest) of un waxed lemon or orange skin .Don’t grate the inner white bit as it is bitter in taste .Take a tsp of zest and keep it on the side. The bowl and the attachments of the mixer should be cold; this can be achieved by placing them in the fridge for ½ an hour. The whipping cream and other ingredients need to be chilled too. Whisk the cream icing sugar, lemon essence or orange and milk powder to a stiff peak and put it in a piping bag and pipe a swirl over the cupcake. Sprinkle lemon zest over the top. This icing should be kept in the fridge.
