Desi scrambled eggs (Andey ka khagina)

Ingredients
- 2 eggs beaten thoroughly
- ½ tsp of turmeric powder
- 4 tbsp of oil
- 1 tsp of crushed chilli flakes
- 1 small onion finely chopped
- 1 small tomato finely chopped
- ½ tsp of salt or according to taste
- 2 tbsp of chopped coriander leaves
- 1 small green chilli finely chopped
Method
Step 1
In a pan heat the oil. Make sure that the pan throughout in the cooking is on low flame otherwise the dish will not come out as it is expected. Put onions which were very finely chopped first, let it cook on low flame till the colour changes to transparent. Then add tomatoes and stir it till the tomatoes soften and also add crushed chilli, turmeric, salt. Add beaten eggs, constantly stir them to mix with the onions and tomatoes for them to bind. We are making scrambled eggs so small grains or granular appearance is what we have to achieve. The oil will separate from the eggs and in the end add chopped green coriander leaves and green chillies. Serve with bread or puri.
