Chicken and plums

Ingredients

  • Chicken with skin one and a half kg
  • Plum 1/2 kg
  • Dried plum 8
  • Chilli flakes 2 tbsp
  • Butter 2 tbsp
  • Par boiled potatoes 1/2 kg
  • ginger garlic paste 1 tbsp

Method

Step 1

Place the fresh and dried plums along with salt and chilli flakes with 1/4 cup of water to soften the fruit. A thick pulp will obtained after gentle simmering for 20 minutes.Remove the seeds. and let it the mixture cool.

Step 2

Marinate the chicken with salt , plum sauce, butter along with ginger garlic paste.Let it marinate for 4-5 hours.Tie threads around the chicken to approximate the wings and legs together.Place the chicken in a roasting bag and tie a loose knot at the with small slits at one or two points . for the air to escape. Pre-heat the oven on medium for 10 minutes and place then chicken in the oven on medium heat and let it cook till the chicken is tender along with par boiled potatoes. It takes around an hour for the chicken to cook.

Step 3

Remove the chicken and potatoes from the bag and turn the heat of the oven to maximum for 5 minutes to crisp the skin. Serve with steamed vegetables.
