Andarsa (Rice flour and sesame seeds)

Ingredients

  • 1 cup of rice flour
  • 1 tsp of dry yeast or 1 packet/sachet
  • ½ cup of sugar
  • Ghee for deep frying

Method

Step 1

Mix in dry yeast with 1 tbsp of sugar and 1 tbsp of warm water. The bubbles will start to form this means the yeast is activated and ready to be added.

Step 2

Now take rice flour, sugar and water mix them so that they become a smooth batter with a running consistency, such that when the batter is allowed to fall from spoon into the bowl it forms ribbons (ribbon like consistency). If you add too much water the mixture will split when deep frying.

Step 3

Now add in the yeast to rice mixture and leave it to rest in a warm place covered for at least 2 hours. Stir it and heat ghee/oil in a pot in which you want to deep fry. Then take a small spoon scoop the batter and pour it in hot oil/oil ghee. The oil should be around low to medium flame (otherwise as soon as you put the batter the batter can burn). Cook it for a minute and take them out on a paper towel. In a plate put some sesame seeds .While the andarsa/ rice flour balls are hot coat them with white sesame seeds. Serve it with tea.
